Good morning to you!

We humans have accomplished some remarkable things. We have walked on the moon, invented the internet (thank you, Al Gore) and figured out how to make everything better by wrapping bacon around it. Yet, one question stumps us: Which came first, the chicken or the egg? This debate has sparked more family arguments than politics, football and whether pineapple belongs on pizza or not.
The chicken makes a compelling case. No chicken, no chicken eggs. Seems airtight. The egg, however, has history on its side. Eggs existed long before chickens. Dinosaurs were laying them while the closest thing to a chicken was still millions of years away from becoming someone's Sunday supper.

Science offers a satisfying, if slightly anticlimactic, answer. The first true chicken likely hatched from an egg laid by a bird that was almost, but not quite, a chicken. Somewhere along the evolutionary assembly line, Mother Nature installed a software update, and out popped a chicken. Congratulations, egg. You win on a technicality.

That may settle one mystery, but the more interesting question today is this: Which has grown more over the years, the chicken or the egg? The answer is not even close.

A bit of research shows that modern broiler chickens have undergone one of the most dramatic makeovers in agricultural history. Since the 1950s, they have been selectively bred to grow faster and produce more breast meat. Researchers raised broiler breeds from 1957, 1978 and 2005 under identical conditions. After just 56 days, the 1957 birds averaged about 2 pounds. The 1978 birds reached about 4 pounds. The 2005 birds tipped the scales at nearly 9 pounds. In just half a century, chickens became roughly four to five times heavier while eating remarkably similar diets.

Eggs, meanwhile, have grown, but only modestly. Consumers prefer larger eggs, and hens have been bred to produce them. Still, biology eventually waves a red flag. Larger eggs require more calcium and energy, and there is only so much a hen can reasonably accomplish before everyone involved starts questioning the plan. A modern large egg weighs about 57 to 64 grams. A century ago, eggs typically weighed closer to 50 to 55 grams. That is an increase of only about 15% to 25% over many generations.

Even compared with their wild ancestor, the red junglefowl, domestic chickens grew only gradually for thousands of years. The explosive growth came during the last century through modern breeding.

If chickens and eggs had grown at the same rate, breakfast would require a chainsaw instead of a spatula, and the average omelet could feed an entire Little League tournament. Fortunately, hens refused to cooperate.

Sometimes, even Mother Nature knows when enough is enough.

Have a thoughtful Thursday, and thanks for reading.

Betcha didn't know
World Cup fans from abroad are amazed over free fast food soft drink refills. Most people think McDonald's initiated this but Taco Bell introduced it in 1988, and every other fast food giant was forced to copy. Of course, they also have contributed significantly to America's obesity and diabetes epidemics.

Another American tourist attraction is the All You Can Eat buffet. They have been an American institution since 1946 when El Rancho Casino in Las Vegas instituted a $1 Buckaroo Buffet at midnight to keep gamblers on the floor. There are a dozen of them now in the Des Moines metro and more than double that many on weekends.

FOOD DUDE
Tacos Mariana’s — an international romance

By Jim Duncan

Thirty years old this year, Tacos Mariana’s has no peer in Des Moines. Not as a taqueria. Not as what some call “a hidden gem” and others label a “hole in the wall.” Certainly not as a vehicle for the transportation of expectations.

Mariana Gomez’ taqueria occupies a little more than 2,000 square feet of real estate that few notice driving by on busy University Avenue. Its building also includes a convenience store in what was deemed a food dessert before Simon and Don Cotran took over a defunct city-subsidized supermarket five blocks to the east and turned it into the booming C Fresh Market. ...
