Good morning to you! 

Being just a few days past the Thanksgiving feast, you many still have memories of the spread on your table. And, when I say spread, I mean spread. Yes, butter. Or margarine. But, which is healthier? The Mayo Clinic says margarine often tops butter when it comes to heart health.

“Margarine is a blend of oils that are mostly unsaturated fat,” their website says. “Butter is made from cream or milk. The type of fat found in animal products, such as cream, is mostly saturated fat. Replacing saturated fat with unsaturated fat may lower the risk of cardiovascular disease. Fat in plant oils lowers total cholesterol and low-density lipoprotein cholesterol, or ‘bad’ cholesterol, when it takes the place of saturated fat. The finding is very strong for oils made mostly of polyunsaturated fats, such as soybean oil, when they replace saturated fat.”

Emer Delaney, R.D., P.T., a registered dietitian and founder of My Private Dietitian, says in a Prevention.com article that to answer the butter or margarine question, you must look at how each is made.

“Butter is made by churning milk, which separates the fat from the milk. It’s then allowed to stand, which means the fat rises to the top and is then separated from the liquid,” Delaney explains. “Margarine is made from blending different vegetable oils such as sunflower or soybean oil, which have been refined and emulsified. It was originally developed as a cheaper, ‘healthier’ alternative to butter.”

Fair enough. The unfortunate bottom line, though, is apparently to not eat butter or margarine. But, if you can’t resist the spread, skip the stick and choose soft or liquid margarine.

My parents divorced when I was young. Mom had margarine in her refrigerator. Dad had butter. Dad died before Mom did. Maybe there is a correlation. Maybe not. All I know is that the butter from Dad’s refrigerator did not spread well on my toast. Mom’s margarine did. My wife found the solution to this dilemma, as she does not put our butter in the refrigerator, which is apparently OK — at least for regular, salted butter. Who knew?

The downfall of not having a tub of margarine, at least for me, is that I can no longer giggle while I gently open the lid and say, “Butter.

Light snow and flurries this morning. Very spotty in nature. Temperatures will fall from 30 in the morning to the teens for this afternoon. We look to be down near the record low of -6 on Thursday. It will be sunny, but cold.

We'll see a return to warmer temps near 30 again into Friday and Saturday but the clouds return, and so do snow chances. The first of two clippers crosses the state Saturday night into Sunday and again Monday night to Tuesday. Both could bring a quick hit of a couple inches of snow.

Refill Market, in the new Star Lofts mixed-use building at 2701 Ingersoll Ave., sells dry ingredients and encourages “bring your own” containers to fill and refill. They also sell grab-n-go sandwiches and salads. David Baruthio has secured space in the same building for his latest French dining room. That's mixed use all right.

In 2024, the global street food market was valued at $249.6 billion. It should grow 8.5% annually until 2033, according to Future Data Stats. It's big enough now that Budapest's tourism board is featuring its street food markets in promotions: "Budapest’s street food roots are anchored in beloved national favorites that have been delighting locals for generations. Iconic spots like Retró Lángos and Pesti Lángos serve the city’s must-try fried flatbread piled with sour cream, cheese and garlic, while Nokedli Factory and Kaiserin breathe new life into comfort dishes like soft dumplings (nokedli) and fluffy shredded pancakes (császármorzsa). The first movie I saw in a theater was “Ghostbusters II” at the Showcase Cinemas in Milan, Illinois. My parents asked if I wanted to see that or “Honey, I Shrunk the Kids.” It was 1989, and I was a mere 4 years old. “The Real Ghostbusters” cartoon was on TV, and I had an abundance of related toys, so, of course, I wanted to see “Ghostbusters II.” The original “Ghostbusters” film was also one of the few VHS tapes that we owned because it came with our VCR when it was purchased. My dad would put that on repeatedly until the VCR eventually snapped the tape while it was rewinding. (We paid to have it fixed.). ...

As an alumnus of the University of Northern Iowa, Casey Clark recalls that, during his formative collegiate years, he had a passion for science. Making the decision to pursue a career around the subject was simple.
“I enjoyed science, and I liked talking about science,” he shares. “I felt that being a science educator would be the best way to keep doing that.”
