Good morning to you!

Welcome to another edition of the mailbag where you will find some of the comments, questions and ideas sent recently by readers of this newsletter or our publications. They are edited for space and clarity.

“Yes, my grandfather, my grandson and I have had — or will have — different experiences (A generational quiz, March 18, 2025). Encyclopedias. A concert ticket. Dial phones. Medicine. Education. Travel. Communications. Entertainment. Sports. Wristwatches. Luggage. Freight. Photography. Cash/banks.” - Rex

Well, there’s that. - Shane

“We always had a cow from my uncle's farm (Forgotten foods, March 31, 2025). We ate all the parts of the cow! Mom made liver and onions. She made us eat a piece of liver before we could leave the table. The only way I could get it down was to put about a pint of ketchup on it. Between me and my four other siblings, we would use a full bottle of ketchup. Carnation Instant Breakfast was another go-to in the morning. Of course, Tang was a staple at the time. The space folks drank it!” - Rich

Everything is better with ketchup — except Carnation Instant Breakfast. - Shane

“Hi, Shane. First of all, we called it baloney (Forgotten foods, March 31, 2025). I'd say the rich kids in town said bologna, but there weren't any rich kids in my town. A baloney sandwich with a slather of mayo on white bread was a fine lunch with everybody I knew. Anyway, we'll be in Bologna in a few weeks. Will investigate and provide a report from the baloney home office. Most importantly, the thing you called ‘chipped beef’ on toast and your incredible statement that former military folks you know hated it: Huh? I've eaten what we know as SOS on Army posts, Navy bases and Air Force bases. It was a highlight when SOS was served. I was never on installation when chipped beef was involved. Or dried beef, like my wife makes it. Military SOS on was always made with hamburger, and it was a delight. Everybody went to the mess hall when word got out on days SOS was being served. The real plus: When you could get the cook to put an over-easy fried egg on top. Man, that was heaven.” - John

I need to come to your house for some SOS. - Shane

“You managed to hit close to home two days in a row (It’s hard to be humble, April 1, 2025)! Mac Davis' weekly TV show was a given in our household growing up. This reminder will cause me to dig out the vinyl for a listening session, or two, today. I hadn't thought of him for ages. Isn't it just plain weird the songs we listened to over and over years ago, we can sing along and not miss a word so many years later?” Diane

The brain can only hold so much information, and this kind of stuff is what fills mine — along with my junior high gym locker combination. - Shane

Have a thoughtful Thursday, and thanks for reading.

Internet food report
When it first looked like Tik Tok might be shut down without an American buyer, Americans flocked to RedNote. Now they are staying for the food, inspired by Chinese recipes. There has been a particular frenzy around one humble, homestyle dish rarely served at Chinese restaurants in the U.S. — steamed egg custard, or jidan geng, which looks like flan but isn’t sweet.

It's a simple recipe, involving just eggs and water and a pinch of salt, but even Chinese cooks who try it for the first time often fail to get the water-egg ratio right and either overcook or undercook the eggs, resulting in either an unattractive beehive or a watery blob. It's now an internet sensation and Wall Street Journal reports Chinese restaurants in the U.S. are adding it to their menus.

FOOD DUDE
Chicago Speakeasy is an ode to comfort

By Jim Duncan

The year was 1978, a most Dickensian time. A murder/suicide in Jonestown, Guyana, ended 909 American lives while Israel and Egypt were finding accord at Camp David, Maryland. Argentina won its first World Cup after Peru’s national team laid down and allowed six Argentine goals in a strange group stage semifinal, just enough to keep Brazil from moving on in Argentina’s favor. Brazil broke off diplomatic ties with Peru. Many World Cup rules were changed. “Grease” was the most popular movie in every country on Earth. The Super Bowl moved into prime time, Carol Burnett retired her TV show, and SNL debuted “The Blues Brothers.” ...

A wedding to remember
Couple shares how they made their day special.

By Sean Dengler

Few milestones are as momentous as a wedding. Family and friends often gather from near and far, the preparations may take months, and every detail is given thought. From the wedding attire to the decorations, music and venue, the couple makes countless decisions with one goal in mind: for theirs to be a wedding to remember. This month, one couple shares the scrupulous planning they did so their special day would be exactly as they envisioned. If a wedding is in your future, we hope you find inspiration from their story. Or, perhaps, their journey will spark memories of your own.

For Robert and Deborah Loenichen, it was love at first sight at one of Altoona’s most famous establishments.

“We joined a Facebook friends’ group,” Deborah says. “I moved here in ’21, and then, two weeks after moving here, we went to the Big Steer for a friends’ group dinner in Altoona. That's where we met.” ...
