I never really paid attention or cared about this until nearly 52 years ago when we got married (How do you roll, Oct. 16, 2024). My wife insisted ‘over’ was the only correct way. It wasn't a big deal, and it contributed to marital bliss. Over the years, I have become a believer of ‘over.’ It really does seem to work better. Scott Carlson at Americana

Scott Carlson opened Des Moines’ first successful brew pub. Recently, he sold his share of Court Avenue Brewing Company (CABCO) to concentrate on Americana, Gilroy’s and the Iowa Craft Beer Tent at the fairgrounds, which he also founded. He has just completed many years of leadership with the Iowa Restaurant Association (IRA) and the National Restaurant Association (NRA).

We asked him to lunch and met at Americana, his contemporary restaurant in the historic former Manbeck Chrysler building in the Western Gateway. Americana is a local weekend brunch legend with an endless mimosa/screwdriver/bloody Mary option and six elaborate stations. Over Mandarin salads and seared ahi, we talked about the last 30 years in the life of Des Moines’ food scene.

Wall Street Journal’s think tank “The Future of Everything” released their findings that focused on food. Here are two of them summarized: The future of cooking oil may likely come from algae. Algae cooking oil has just a quarter of the saturated fat found in olive oil and is higher in heart-healthy monounsaturated fat than other popular cooking oils. It also contains less of the polyunsaturated fat that is found in seed oils. Algae oil has a higher smoke point than many other oils, allowing it to remain stable when used for high-heat cooking without degrading the oil or affecting flavor. a Dutch company with plants in Brazil has bred a super algae for cooking oil. It originally derived from sap in chestnut trees.

Seaweed is making its way into more foods, cosmetics and even pet kibble. In the U.S., most of that seaweed is imported from Asia; in 2019, the U.S. produced just 0.01% of the world’s seaweed. As a crop, seaweed could bring environmental benefits, like reducing acid in oceans and absorbing excess nutrients that can be harmful to marine life. Economic benefits could help fishermen whose livelihoods are threatened by global warming. Maine-based Atlantic Seafoods is the leader, and Albertson's and Whole Foods provide the most demand.

• Firecracker shrimp are $6 on Thursdays, and five pasta dinners are just $12.99, including fettuccine chicken Alfredo, at Bianca’s Grill & Vineyard (410 S. Ankeny Blvd., Ankeny).   

• Red Lobster (3838 Westown Parkway, West Des Moines) offers a Thursday special of Maine lobster tail with shrimp scampi and a side for $20.

• Chicago Speakeasy (1520 Euclid Ave., Des Moines) has fried chicken on special every Thursday with the ice-cooled salad bar.  

 Whatcha Smokin (Luther, Iowa) offers its decadent pork belly burnt ends today. 

• Hy Vee Market Grill has a Thursday special sirloin steak dinner with potato and green beans for $10.                          

• Price Choppers have popular Cosmic Crisp apples on sale for 99 cents a pound and Marie Callender frozen pot pies and entrees for $1.99 each through Monday. 

• Bubba (200 10th St.) runs a dine-in “Sips & Sliders” promotion every Thursday, 4 p.m. to close - $6 select drinks and $10 mix-and-match BBQ slider trios.

Meet Nikki Sampson
Sampson makes impact as a teacher associate

Nikki Sampson has made such a difference in ADM Community Schools that, two years ago, she was honored by the ADM school board with its Honoring Excellence Award, which recognizes outstanding staff members for their contributions to the district.

Sampson has worked in the school district for more than a decade. She moved to town in 2009 and, a year later, took a job at the elementary school as a paraeducator. Three years ago, she transferred to DeSoto Intermediate to work as a teacher associate.

When she first took the role as paraeducator 15 years ago, it was so she could have the same schedule as her kids, who, at the time, were in first and fourth grade. Sampson wanted to be able to have summers and holidays off like them to spend more time together. Those two kids are now graduates of ADM themselves, which makes Sampson doubly proud to work in the school system.
