Good morning to you!

“Expect the unexpected.” That’s a great piece of advice about thinking ahead and having a plan B in case things don’t go as intended. Because, realistically, how often do things truly go as planned?

On a related note, I live by a piece of advice I received years ago on hiring in the workplace, which is, “The best predictor of future performance is past behavior.”

If Matt stole from his prior employer, he will likely steal from his new boss, too. If Jane was consistently late getting to work at her old job, she will likely be tardy at her new employment, too. If any employee engaged in gossip and created drama in the workplace, guess what? That person will likely partake in the same activities in the new job.

As humans, we like to think we can change, but most of us rarely do. Some of you may strongly disagree with this. You know one person who truly did change. Maybe you are that person. If so, good for you, as you beat the odds.

Those who don’t believe that the best predictor of future performance is past behavior are typically those who shoot from the hip and don’t rely on data to make decisions. As such, they also don’t typically agree with the next two ways to predict future performance, but others swear by them.

I have a good friend in our industry who grew tired of making bad hires, ultimately noting that he “needed to hire smarter people.” He decided to make each of his top candidates take cognitive ability tests, or what most of us know as IQ tests. He claims he was able to weed out those who could not understand basic tasks, process information, plan appropriately or control behavior.

Another industry cohort whom I respect relies on personality tests in all his hiring including a five-factor personality model that looks at dimensions of neuroticism, extraversion, openness, agreeableness and conscientiousness.

Of course, these are all great methods to hire the best people when you have fists full of resumes. Unfortunately, many of us only receive a few applicants for a job opening and feel fortunate when one actually shows up for an interview. This has become all too common for reasons most of us can’t comprehend. Yet, when we do make a hire, we become frustrated when the person doesn’t work out.

Maybe this is where those three words I started this column with mean the most. “Expect the unexpected.”

Woebegone Wednesday. Tide houses were a form of vertical organization that gave brewers monopolies at individual taverns. Schlitz invented their use in America while in hardball competition with Pabst for Milwaukee drinkers. Today, one can still identify which taverns were which brewer's clients by the style of the outdoor staircases. Pabst got the last laugh. They now own Schlitz.

Andrew Jackson's Hermitage farm near Nashville keeps its hanging room up to early 19th century standards, which means dry-aged bacon. That was the only place I had seen it, and it's a museum. Now, Jones Dairy Farms has released their first dry-aged bacon. It should be available at Hy-Vee and Schnuck's stores in Iowa soon. Jones is the supplier of Jethro's bacon.

Sinatra haunts, part XI. The very retro Golden Steer Steakhouse has been just off "The Strip" since before it was called "The Strip" — 1958 to be exact. It is Las Vegas' oldest steakhouse and retains the old-fashioned, red-booths-and-white-tablecloths look that made it a hit with Rat Pack stars and Chicago mobsters alike. Sammy Davis Jr. in particular came here often after shows since the hotels he performed at had segregated bars. For the full Rat Pack experience, reserve Sinatra's plaque-commemorated favorite table ahead of time and order cherries jubilee or bananas foster for a table side show.

Specials today. Wednesday is Chicago Italian roast beef sandwich day at Graziano Brothers (1601 S. Union St., Des Moines) $10... Marianna's (1305 University Ave., Des Moines) has Taco Wednesday and Thursday because they are closed on Tuesday... Red Lobster (3838 Westown Parkway, West Des Moines) offers steak and lobster tail with a side for $25 on Wednesday...
